This was my very first time in participating in the Adopt a Gluten-Free Blogger series. What a treat! It was obvious for me to pick someone who cooked without a lot of grains since we are 3 weeks into our Paleo, grain-free trial. I wanted to eat the culinary creations I whipped up!
I first stumbled upon The Urban Poser when her “No Oatmeal Creme Pie Cookies” caught my eye out in the blogosphere. Once I landed on Jenni’s site, I was eager to peruse all the amazing eye candy: this is one talented food photographer! And better yet, here was a blogger that cooked with minimal sweeteners and had a focus on real food: a perfect fit!
Exploring The Urban Poser even more thoroughly was a great pleasure. With her witty, down-to-earth prose, you feel like you are cooking with a friend!
These cookies are a recent creation by Jenni and are a complete home-run. A home-run when your team is down by 3 and the bases are loaded. Smokin. I was first drawn to the recipe as it had no eggs and used so little sweetener! The results were soft, tender, and had a lovely chewy texture. My husband took one bite and exclaimed, “These are %^#$@ awesome!” I would have to agree.
So few ingredients, and no eggs to boot, these grain free cookies are a surprise: how can such simple ingredients create such a perfect gluten free cookie?! I even got away with using 3 tablespoons of honey instead of the 1/4 cup…crazy!
Enjoy people, I know my neighbors, my family, and well….mySELF have really, REALLY enjoyed these cookies, and I would guess you will too!

- The Best Almond Flour Biscuit Style Cinnamon Rolls ( I posted a strawberry-orange version of these, really a treat!)
- Almond Flour Pumpkin Muffins
- Almond Crusted Fish Sliders
- Vietnamese Style Chicken Cabbage Salad – I served this with the Vietnamese Grilled Chicken on my blog and was in love…what a great dinner, so flavorful!
- Pumpkin, Apple, Chive, & Bacon Biscuits
- Vietnamese Cauli-Fried Rice w/ Nuoc Chom – This was AMAZING! The cauli rice is so sneaky, and you really feel like you are eating rice! So many flavors here, loved it!
