I am sneaking in a few submissions to this year’s So Delicious Dairy Free 3 Course Recipe Contest!

I use SO Delicious coconut milk products A LOT….whether it be the milks or the yogurts….they are always stocked in my refrigerator.  It is so nice to have soy free, nut free, dairy free options out there for us!

Main Courses:

Creamy Ham & Potato Chowder – Dairy Free.  A family favorite…everyone who tries this always loves it and is surprised it is not laden with dairy.  Super quick and easy to pull together too with lots of kid-friendly flavor!

Healthier Meatloaf – Gluten Free w/ Egg Free & Paleo Options.  We make this recipe at least once a month, and it is one of my favorite freezer meals to pull out in a pinch!  This one sneaks on more veggies than your average meatloaf too!

Desserts:

One Healthy Chocolate Cake  – Gluten Free & Vegan.  Easily one of our very favorite recipes for chocolate cake, I even serve this one to my kids as a snack!  Low sugar, deep chocolate, no starch, and supremely moist thanks to the applesauce/pumpkin and SO Delicious Coconut Milk Yogurt!

Dense & Fudgey Chocolate Brownies – Paleo, Vegan, & Nut Free!  A very popular recipe enjoyed by many.  It can be so difficult to create autoimmune-friendly desserts, but this one happily fits the bill to great reviews!

    Hi Tessa — You are one of my favorite food bloggers, and I love your focus on health. I have to admit that I’m surprised that you are endorsing the So Delicious brand because it does have Carrageenan in most (if not all) of their products, and that dreaded ingredient is so toxic when consumed regularly. I thank blogger Angela at Oh She Glows for sharing her knowledge about this ingredient that I am now aware of and regularly avoid.     • Hi Anne, thanks for your support, this a good question!

      I am familiar with carrageenan, and I don’t love what I read either.

      Here is the thing. Every time I turn around, something else I thought was an OK food choice ends up having it’s own issues:
      nuts & seeds- too high of Omega 6 content, should I soak, should I sprout, should I avoid all together?
      dark leafy greens: high in oxalates…should I avoid or prepare a special way to minimize?
      grains – should I avoid them all costs? Should I soak them IF I eat them?
      are starches better for me because they are easier to digest or worse for me because they spike my blood sugar
      fiber: good? too much fiber bad?
      Kale is high in goitgrogens…should I not eat by beloved raw kale salads and kale chips…or wait, I thought eating food that was alive was the way to go too?
      You get my point.
      I read so much, I research so much…but the stress of keeping up with all the research and putting it into practice is so taxing!
      I already spend over 2000 a month on groceries in my attempts to feed my family as well as I can. I spend more hours in the kitchen every single day than most do to feed my family safe and nourishing foods (my son has to avoid 8+ food groups, and kids can be a wee bit picky!).
      I could certainly make my own milks and yogurts…and I do sometimes (I prefer it actually), but I simply can’t do it all and still be sane and present with children and spouse.
      My point is…I can’t do it all. I can’t be a food perfectionist as much as I want to.
      Don’t get me wrong, every time I read a label, I roll my eyes and wonder why is it necessary to put THAT in there…it would great without it! Come on companies, just do it because you know it is BEST!! It annoys me!
      Part of me wants to rally and fight the system and try to make these companies change…but then I just can’t….I am out of steam after making and cleaning up 3 meals and 2 snacks every single day and doing all the other mom responsibilities…and my first priority needs to be MY well mental well being…which this perfectionist can struggle with! (:
      And so a very long answer to your question Anne…carageenan is not something I want to be consuming a lot of…it falls into the moderation category, for sure. Here is another great article on this too:
