Today I am spotlighting a recipe from a a fellow mom blogger. Her and I seem a lot alike in so many ways! Amber runs The Tasty Alternative, and this is her recipe featuring two of my very favorite things: pumpkin and chocolate!
I made these yesterday with a few tweaks, and they turned out divine! Dense, fudgey, but still healthy!
Of course my kids think it is a dessert…and it is…but this is a dessert that manages to sneak in all sorts of healthy ingredients! To see the original recipe, you can visit Amber here.
- Switched out the milk for more pumpkin puree
- Used pecans in place of the walnuts.
- I had to add a couple more tablespoons of cocoa powder to really up the chocolate intensity and 2-3 tablespoons additional palm sugar to compensate for the additional cocoa powder.
- I would recommend you grind the nuts in the processor until pretty fine (but not so long you make nut butter!) to hide the crunchy texture from picky kids.
