Plantain Taco Shells - Paleo AIP

Ingredients

  • 2 plantains greener, not yellow which is too ripe, the sugars will burn before they crisp
  • 4 tablespoons avocado oil, olive oil, or lard, etc.
  • 1 tablespoon water add more as needed
  • 2 to 4 pinches sea salt

Instructions

  1. Preheat oven to 375*F.

  2. Remove peel from plantain.

  3. Blend all ingredients together in a high speed blender or food processor. Add a Tablespoon of water as needed to blend in to a smooth batter. You will have to stop the blender a few times, scrape down the sides, and blend again.

  4. Line a baking sheet with parchment paper.

  5. Spoon 2 tablespoons of the batter at a time onto parchment paper. Use the back of a wet spoon to smooth out batter, and create round tortilla circles about 4 inches wide and 1/8 inch think.

  6. Bake for 10 minutes, then flip, and then bake an additional 5 minutes.

  7. You can enjoy them as soft taco shells, or make hard shell tacos by gently folding them into the shape of taco shells and hanging them over the oven rack, and baking an additional 4 minutes, or until firm. Keep a close eye on them to prevent burning.

  8. 8. Fill with carnitas pork tacos (as pictured), seasoned ground beef, or bbq jackfruit, diced red onion, cilantro, and a side of cabbage slaw.
