Instructions
Heat a large pan with a lid over medium heat.
Sauté the ground beef, onion, bell pepper, and garlic.
When the beef is mostly cooked through, add the remaining ingredients (add the drained black beans here as well if you so choose).
Bring to a low simmer, and cover. Cook for about 20 minutes to let the flavors meld and permeate one another.
Serve atop a bed rice or garlic sweet potato mash and garnish with chopped cilantro and avocado.
