In the bowl of a mixer, beat the palm shortening (or preferred butter), sugar, egg choice, and vanilla until smooth and creamy.
Mix in the chocolate chips, graham crackers (if using), and marshmallows.
Spread into the prepared pan to make more or less even. Batter is stiff, go ahead and use your fingers to spread it out evenly.
Bake for 30-35 minutes until golden throughout. The blondies will still seem gooey in the middle...just let them cool and they will firm up!
Let cool completely to firm up, cut, and store in an airtight container.
