Yes! I love to make my own creamy nut milks for ice cream too. Sometimes my kids turn a nose at coconut flavored anything, so I turn to a creamy blend of raw cashews or almonds and water.
I simply blend one part raw nuts to 3 parts water. Almond milk needs to be strained, cashew does not.
Store bought almond and nut milks will NOT work well. Too much water.
Yes! Simply pre freeze a bread loaf pan in the freezer. Then:
- pour strawberry mixture into the frozen pan, place back in the freezer
- for the first hour or so, stir the mixture every 15 minutes to ensure even cooling
- continue to freeze until desired texture achieved

Low carb or keto strawberry ice cream recipe?
You can easily make this a dairy free AND keto ice cream! In place of the honey, use 1/2 cup erythritol in the ice cream. Just be sure to blend for at least a minute to ensure the granules dissolve. In the chocolate sauce, be sure to use my favorite low carb chocolate: Lily’s!! It’s fair trade and totally decadent!
Dairy Free Strawberry Ice Cream Recipe:

Dairy Free Strawberry Ice Cream w/ Fudge Sauce
- 2 cans coconut milk full fat, OR 1/2 & 1/2 OR cream. Part whole fat kefir or buttermilk is delicious too
- 2 1/2 cups strawberries fresh or frozen OR raspberries
- 1/2 cup honey OR maple syrup, OR sugar
- 2 teaspoons vanilla extract
- 2 teaspoons balsamic vinegar optional but awesome!
- 1 tablespoon gelatin softened in 1/4 cup warm water OR xantham gum, optional. Just for easier scooping after frozen.
Puree all ingredients in a high powered blender. Taste to make sure sweetness is to your liking, and add more if deemed necessary.
Place creamy mixture in to the bowl of you ice cream maker and follow your manufacturers instructions.
While your ice cream freezes, work on your chocolate sauce!
In a small saucepan, melt the chocolate sauce ingredients gently over medium low heat.
Once it is all melted and smooth, set aside to wait for your ice cream!
