Paleo Nutella Cookies

With a rich and chocolaty flavor, these paleo nutella cookies are a healthy and allergy friendly treat!  No eggs, no dairy, and they are easily made in your food processor!

Nutella cookies without any Nutella! 

These cookies have all the wonderful chocolate and toasted hazelnut flavor without using the not so healthy OR allergy-friendly Nutella.  Back when I first started this blog, I recreated a Nutella recipe….but that was back when I still used sugar.  I am working on a sugar free version now…but no perfection…. yet.

Grain free and vegan baked goods can be hard to find as not using eggs with all the protein-rich flours can be even trickier than  gluten free/egg free baking (is that even possible?!)

I remember feeling so completely overwhelmed when I first started doing gluten free vegan baking…it seemed like I would never get it.  But now, it is second hand.  I am hopeful that my expertise in grain free cooking will one day match! 

Or maybe my son will actually be able to tolerate eggs….is it too much to hope?  Just one little allergen back on the menu?!  Please?!  Maybe the Chinese herbs we hope to get soon will do the trick…I can hope, right?

How Do I Remove Hazelnut Skins Easily?

To remove the skins from hazelnuts, after toasting them in a 350 degree oven for about 12-15 minutes, vigorously roll the nuts between a folded kitchen towel. 

This can be a pain, but it will get most of the skins off for you, which is all you need!  Alternately, pre-skinned varieties DO exist for purchase!

Paleo Nutella Cookies

Ingredients
  

  • 1/4 cup butter ghee, or favorite vegan butter
  • 1/4 cup coconut oil or more butter, softened
  • 6 tablespoons honey or coconut nectar
  • 1/2 cup toasted hazelnuts papery skins removed
  • 1/2 cup almond flour
  • 6 T coconut flour
  • 3 tablespoons cocoa powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/4 cup chocolate chips to taste

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a food processor, whir the butter, oil, and honey until creamy and smooth.
  • Add in the whole toasted hazelnuts and pulse to chop them.
  • Add in the remaining ingredients through the baking soda and process until well mixed. You want to leave some nut pieces, and not puree the whole thing.
  • Taste, make sure it is sweet enough for you! Adding an additional tablespoon or two of sweetener or stevia equivalent is fine.
  • Add in chocolate chips as desired and pulse a couple of times to mix. Your dougn should be stiff, just like a typical cookie dough batter. Adding a tablespoon or two more of any of the flours is ok!
  • Drop by rounded tablespoons onto to a greased cookie sheet.
  • Bake for about 8-10 minutes until just golden around the edges, and no more! Grain-free cookies can dry out quickly!
  • Let cool, and then store in an airtight container.

    What do you bake your cookies on? I have tried finding a good stainless steel cookie sheet, with no luck. I’m looking for another option. (P.S. Your cookies always look amazing! I haven’t tried all of them, but we love the ones I have tried. Yum!)

    Do I melt the coconut oil or just pack it in solid form like a shortening?
