Gluten free donuts are all the rage, and  I knew my kids would love just about anything I put into a donut form….I mean they’re cute, am I right?  And kideeze…that speaks LOUDLY!

We were all thrilled with the results….moist banana donuts with no starches, no gums, and totally nourishing for your body.  That puts this recipe well into my happy court!

My Favorite Donut Pan

I purchased a donut pan for $12 on amazon.  It’s easy to use and fun to have around!

No Donut Pan?  No Problem!

Refer to this post on how to free form donuts when you do not have a donut pan.  (If you do this method, you will need to add additional flour to thicken, start with about 1/4 to 1/2 cup).

OR, simply bake these bad boys up in a mini muffin pan…still great!!

Want to Glaze or Frost Your Gluten Free Donuts?

  • Powdered Sugar Glaze @ Gluten Free Palate
  • Chocolate Glaze @ Savory Lotus
  • A simple cinnamon sugar mix would be tasty too!  Just brush with any melted butter, then dip!

Ingredients

Wet Ingredients:

  • 1 tablespoon chia meal or flax meal
  • 3 tablespoons warm water
  • 3 tablespoons non dairy milk or any milk
  • 2 over-ripe bananas lots of brown spots, mashed
  • 3 tablespoons coconut oil melted, or other oil of choice
  • 1/4 cup palm sugar or other granulated sugar of choice I replace half with 1/4+ teaspoon liquid stevia
  • 2 teaspoons vanilla

Dry Ingredients:

  • 1 cup oat flour whir your own rolled oats in a spice grinder or blender
  • 2 teaspoons cinnamon optional
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  • Preheat the oven to 350 degrees. Grease your donut pan.
  • In a mixing bowl, place the chia meal and warm water, stirring to thicken and make a chia egg. Let gel for a minute.
  • Stir in the rest of the 'wet' ingredients.
  • Sprinkle the dry ingredients on top, and whisk in. Let the batter rest a couple minutes to fully absorb some liquid.
  • Using a spoon, scoop up about a tablespoon of batter, and drizzle/plop it into the donut space. Fill the tins about 3/4 the way, and bake in the oven for 8-10 minutes (for mini donuts) until just set. If you are using a large donut pan w/ 6 donuts shapes, you will need to bake an additional 3-4 minutes.
  • Eat as is, or check out my links above for a glaze.

These looks so delicious, and I’d definitely be adding the maple glaze because maple and banana are too good together!

Hi Tasha! I have ever used a donut maker before. I would suggest following the donut maker’s suggestion, or your past experience! If you don’t know, I always test one to start as an experiment! Good luck!

hi tessa, i made these free form and found them yumo! of course my fussy 4 year old GF, EF and DF daughter didnt like them – she seems to be soooo fussy. anyway i was wondering if you think these might work in a doughnut maker? in the old days i used to use a runnier batter – maybe similar to the batter this recipe made before i added the extra flour. i can just try it myself but wondered if you had any experience with this. well im off to eat my 3rd or 4th of these little monsters. gotta be good for me right!

I hear you on the picky kiddo Solitaire! My little guy has me beating my head against the wall at times! I have not used a donut maker, but I think our instinct is right, the thinner version should work!

I tried this recipe this morning. I don’t have a donut pan so intended to form them. In the end they turned into muffins as the dough was way to wet to form. It was about the consistency of cake batter. Maybe it was due to my bananas having been frozen and the little it of frost on them turned to liquid, which might have made the dough soft. But i thought I’d share my experience in case someone else is going to try this without the donut pan. I do love how quick and easy this is and the muffins turned out fine.

Thank you dawn for letting us know! Next time add some more flour if it is too wet….I will make a batch and test to see how much more flour is needed to free form them (I prefer that methos anyways, more meaty donuts!) and will check back in when I do! Give me a day…….

i would try a mixture of teff/brown rice/ maybe a bit of starch. Do you have those flours? Some almond flour could be good too..

Tessa, Brilliant my friend. Just beautiful. These also caught my eye. I love your super healthy version – and that glaze (gasp)! Okay, so I need to invest in a cool donut pan. I was experimenting with some pineapple muffins (cupcakes?) tonight and thought…I need to run this recipe by Tessa and see if I am missing anything. 🙂 Hugs,–Amber
