This is seriously, probably the easiest dinner to pull off. TWO INGREDIENTS and some seasoning? No cutting? No chopping? Crock-pot or pressure cooker?? AND gluten free, Whole 30 compliant, Paleo, keto. dairy free??!! I am IN! And I hope you are too!
We make this for another filling variety for taco night. Tender, flavorful pork shredding apart with fork’s touch and a delicate flavor that even my spice averse kids gobble up.
I love taco nights, because it means we get to have taco leftovers the next day…and my kids gobble their lunchbox wraps up in a heart beat. I have done this recipe on the stove (2-4 hours), and in the crock-pot, around 6….depends on when I get to starting it! Of course in my beloved pressure cooker, it take only 45-60 minutes! UPDATE: I now use my beloved Instant Pot exclusively!
This meat would go great served on a bed of my beans and rice, as well as a filling to my Chimichangas. Fresh crunchy salad, diced tomatoes, fresh salsa and avocados….mmmMM GOOD!
PRESSURE COOKER NOTE:
After browning the meat IN THE PRESSURE COOKER, simply add salsa in, bring to full pressure (a slow gentle rock!) and cook for about 30-60 minutes. The time is based on the size of meat chunk (s). If you have one very large piece, it takes 60-75 minutes , if it is divided into smaller quarters or sixths, 30 minutes should suffice. Bring the pressure down quickly with cool water and then simmer off the majority of the liquid.

Instant Pot Pulled Pork Recipe:
Instant Pot 2 Ingredient Pulled Pork
Ingredients
- 1 tablespoon avocado oil
- 3 pounds pork shoulder roast I have used several cuts, whatever is on sale, cut into quarters or sixths
- 12 ounces green salsa (really any salsa)!, we use Trader Joe's Salsa Verde
- salt and pepper
Instructions
Instant Pot

Heat Instant pot to 'saute'

Liberally sprinkle the pork pieces with salt and pepper.

One preheated, place the pork in a single layer to brown. Leave undisturbed for 5-6 minutes to crisp up and develop flavor.

One one side is crusted, you can continue to brown the other sides or just skip further browning and pour the jar of salsa over the top of the meat.
Lock on the lid, set the 'meat' setting. If you are using larger chunks, this time will need to be increased to 45-60 minutes.
Once the time finishes, you can do a quick release to check and make sure the meat is fork tender and readily pulls apart. You may add some more time if it is not quite there.
Slow Cooker

You can forgo the browning, or elect to brown the seasoned pork pieces in a separate cast iron pan.

Places pork in the slow cooker, pour the salsa over the top.

Cook on high for 3-4 hours, or low 6-8 hours. Pork should be fall part tender.

Can you do this with pork stew meat?
Most definitely…any tough cut of meat would work here, however you would only need maybe 3 hours with the smaller pieces of meat (for it to get tender)!

What a delicious idea! I love pulled pork and make it in bulk and freeze it. It makes for a easy dinner on busy nights.
Now I have a slow cooker, I am beginning to understand why everyone likes pulled pork so much – there are so many wonderful ways to serve it! I love this idea, so quick and easy.
