A beautifully flavorful pasta sauce in the convenience of your blender!!

This was another recipe I was drawn to as it used my Blendtec, and required no special effort on my part.  I am not sure why I hadn’t thought of it before, but this recipe is beautiful to look at, beautiful in it’s simplicity, and a lot of fun to play around with.

Roasting vegetables brings out all the lovely sweetness and fills your home with a heavenly, savory perfume.

Have fun, this is a great basic recipe to personalize and play with!

What types of tomatoes are best in this easy homemade tomato sauce?

  • I often use a variety of types of tomatoes…whatever I have in my garden (lots of heirloom types!)
  • cherry tomatoes
  • roma
  • plum
  • amish paste
  • variety of heirlooms

Ways to use your easy homemade tomato sauce with fresh tomatoes:

  • Use as you would any jar of pasta sauce!
  • over a bed of any noodle
  • in a  dairy free lasagna
  • mixed in a casserole (like this keto pizza casserole)
  • as a base for a soup, (we love this lasagna soup).
  • atop a gluten free pizza crust for your next pizza night!

Ingredients and vegetables to play with when roasting:

  • butternut squash
  • capers
  • red wine
  • balsamic vinegar
  • fresh basil
  • eggplant
  • winter greens
  • spinach
  • zucchini/summer squash.
  • diced bacon

For a straight tomato sauce (perfect as a pizza sauce!):

I use solely tomatoes, onions, garlic, seasonings, and a bit of tomato paste to taste.

Here are some recipes that you could use this amazing sauce in:

  • Gluten & Egg Free Chicken Parmesan
  • Low Carb Lasagna @ Irena Macri
  • Keto Meatball Soup

  • 2 pounds tomatoes about, chunked. See above post for variety recommendations. Nothing too watery.
  • 2 carrots cut into large chunks
  • 1 small onion chunked
  • 8 cloves garlic
  • 1 red pepper chunked
  • 1/4 cup avocado oil
  • fresh herbs oregano, basil, thyme
  • sea salt to taste, I would start with 1 teaspoon

Instructions

  • Toss all the vegetables and herbs of choice with the avocado oil.
  • Roast in a 350 degree oven for about 45-60 minutes until vegetables are tender and sweet.
  • Place the whole kit and kaboodle (in two batches if necessary) into the , I blended for about 2 minutes. Alternately, you can use a food processor. Process until creamy and the tomato peels are undetectable. about 5 minutes.
  • If the end sauce is a bit thin (will depend on which tomatoes and vegetables you chose), simply simmer over medium low heat on the stove to evaporate some water and condense the sauce to your preferred thickness!

Hi there …new to this … have QUESTION. Do you yourself cook ANY of the veggies or ingredients before putting into your blender? Or are all ingredients raw/uncooked? Really appreciate details. Thx 🙂

This is such a great way to use up a bunch of summer tomatoes. I love that you roast the veggies first and that everything goes into the blender.

I LOVE this idea! Thanks for sharing. It’s great because you can vary it when certain veggies are not in season (like tomatoes) and use less of them and more of the others, like root veggies. I am running low on my stash from last season and am looking for a way to stretch those tomatoes until the next harvest!
