Smoky Instant Pot Pork Chops

Smoky and ultra tender, these Instant Pot pork chops are slathered in an irresistible gravy!  Low carb, keto and gluten free pork chops in your pressure cooker are easy and healthy!

Tender pork chops are a total crowd pleaser.  Kids and families alike will love the smoky savory gravy.  Simple steps make this a great weeknight dinner, just like my Cajun chicken bites!  I am confident you will be adding this delicious recipe to your menu rotation!

It took me awhile to break the Instant Pot pork chop puzzle.

I tried countess 5 star recipes only to be sorely disappointed with the  end result: ultra tough and dry pork chops.

Boo.

But I didn’t give up…I kept experimenting and ended up developing a flavor mix loaded with umami and flavor.

I have made this so many times now, I am very confident sharing these tender and moist pork chops with you!

I have served this with a variety of easy sides!  Here are some ideas to help inspire you!

  1. Sautéed broccoli is my hubby’s favorite and takes under 10 minutes to have on the table.
  2. My best fresh green beans are super special when they are ripe in my garden.
  3. My oven roasted potato slices taste like a homemade potato chip!
  4. Serves atop a bed of any favorite rice.
  5. Along wide some garlic mashed sweet potato or mashed potato.
  6. My Cajun slaw is a great base for a low carb dinner!

How long do I cook my Instant Pot pork chops?

The final pressure cook time is based on two primary factors: how thick your chops are, and how tender do you want them?  I have based my pressure cook time off of 1″ pork chops (boneless or bone in) as that is is how I usually get them!

  • 18 minutes = firmer, but still wield to a fork cut with pressure.
  • 20 minutes = much easier to pull apart with fork.
  • 22 minutes = shreddable.

If you have thinner or thicker chops, this time will vary by a few minutes either way.  If you complete your time and they are still too tough, lock the lid back on and pressure cook another few minutes!

Tender Instant Pot Pork Chops in Bacon Gravy

Ingredients
  

  • 2 slices bacon chopped
  • 1 small onion chopped
  • 2 pounds boneless pork loin chops 1" thick. Bone in also works.
  • salt and pepper

Cooking sauce

  • 1 cup bone broth beef or chicken
  • 2 tablespoons coconut aminos or gluten free tamari
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons Tabasco style hot sauce optional
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder or 4 cloves minced garlic
  • 1/2 teaspoon liquid smoke found near barbecue sauce is most grocery stores.

To thicken gravy:

  • 2 tablespoons tapioca starch mixed with 2T water, or use 1 teaspoon xanthan gum for a lower carb version.
  • sour cream 1/2 -1 cup mixed in at the end for a fun variation. Totally optional

Instructions
 

  • Preheat the Instant Pot to 'sauté." For browning bacon, I like the 'normal sauté heat.
  • While the insert preheats, finely chop your bacon, then throw in. Let it begin to brown and release some of it's fat for about 3-5 minutes. Then add in your onion. Cook a few minutes to soften the onion, then remove and set aside.
  • Fully season both sides of your chops with salt and pepper. Change the 'sauté' feature to 'more' if available. If not, normal sauté mode works.
  • Place the chops in a single layer...you may need to do this in two batches. The browning develops the flavor, so it is important. After 3-4 minutes, the chop should release easily and be golden brown, flip to the other side to brown. If your chop is sticking, you need to brown a bit more...a well browned meat releases easily.
  • While the chops brown, mix up your sauce ingredients, set aside..
  • Once the chops are browned, hit 'cancel." Add all chops back in, and then the onion and bacon mixture. Pout the sauce over the top. Lock on the lid and set 'pressure cook' high for 20 minutes.
  • Once the timer beeps, hit cancel and quick release. You can also hit cancel and just let it sit there until you are ready to eat dinner, no biggy.
  • If the liquid is still hot, add in either the tapioca slurry or gum to thicken.
  • Serve chops with some gravy and enjoy!

Notes

The thickness of the chops will effect the end cooking time,  If you have thicker than 1" chops, add additional minutes.  Likewise, you could reduce time if they are thinner.  If they are not easily cut with your fork, you know you need a few more minutes!

    Had this last night for dinner and it was a family favorite- I used pork chops with bone in and substituted mushrooms for the bacon since I didn’t have any on hand. Increased cook time to 25 min for 4lbs pork chop. Will have this meal again!

    So many of your Instant Pot recipes sound so lovely. Can you please offer instructions on how to make this recipe in a crock pot (slow cooker)? Some of us don’t have or use an Instant Pot. I don’t have room for another appliance of this nature either. So, I have no plans to get one either. I like so many of your recipes and have to pass them by, because of this issue. This recipe in particular sounds like something I would love to make in my crock pot. I realize it will take longer to do in a crock pot than in an Instant Pot, but that doesn’t bother me. With a little extra planning, crock pots work just fine even for busy people.

      Hi Amy! I’ll try my best! Stovetop, I would brown the bacon and onions, remove and set aside. Then continue with browning the seasoned chops, well browned each side. Place in the crockpot, top with reserved bacon/onions. Pour the sauce mix over the top. It’s possible an extra 1/2 cup or 1 cup of broth will be necessary….but I’ll have to cook it to see for sure. Cook on low 6-8 hours until pork is fork tender, thicken leftover gravy as directed.

    I cook pork chops in Instant Pot often. How interesting that you add sour cream to thicken the sauce .. it sounds delicious, I can’t wait to try this!

    Delicious! I was curious about this recipe because of the unique combination of ingredients and we loved it. The gravy is the magical touch. We also added about 1/2 cup sour cream to the gravy and it was awesome!
