Low Carb Hot Cereal – Keto

This low carb hot cereal will be ready in minutes and satisfy that porridge craving when grains are not on the menu and you can’t stand the thought of another egg breakfast!  I’ve been there…trust me!  As much as I adore eggs, sometimes you just want something ELSE when you are on a ketogenic, paleo, or low carb meal plan!  And even if you are not low carb, this nutrient dense hot cereal satisfies for hours!

I have done various Whole30 resets, and did a ketogenic style eating plan for over a year.  I modified my original paleo oatmeal to enjoy occasionally, and I also did some smoothies (one my favorites was this keto chocolate shake).  And eggs.  Lots and lots of eggs in all their glorious forms!!  I am a total sucker for a molten yolk!

But sometimes…you just want something to change things up…and this cereal was born to fill that need!

Warm and cozy, this cereal is quick to cook up and top with any variety of typical porridge toppings for your pleasure!  Personally…I love to add a pat of Kerrygold butter, some cinnamon, maybe a splash of coconut cream.  Fresh berries are always a worthy addition!

Can I make this low carb breakfast ahead of time?

Yes! 

Simply pre blend all the ingredients as directed, and then store the mixture, uncooked, in your refrigerator until you are ready to cook some up!! 

That means you have a warm and comforting paleo porridge ready to go in under 5 minutes on busy mornings!

Low Carb Hot Cereal Topping Ideas

  • MCT Oil, browned butter, butter, coconut butter are all some great healthy fat options!
  • Chopped nuts or seeds for added crunch
  • Berries are a great addition, and most are good low carb choices in moderation!
  • toasted coconut flakes with coconut butter and lime zest sounds like an amazing combo to me!
  • maple syrup (low carb or not)
  • coconut cream, cream, or milk

Additional Low Carb & Keto Breakfast Ideas:

Creamy, cozy, and ultra filling, this low carb and keto hot cereal if a perfect way to change up your low carb start!

Ingredients
  

  • 1 cup almond milk or any preferred milk
  • 1/4 cup raw pecans
  • 2 tablespoons almond flour or whole almonds
  • 1 tablespoon flax meal or chia meal
  • 1/4 teaspoon cinnamon or more to taste
  • 1/8 teaspoon sea salt
  • 1 tablespoon erythritol, stevia glycerite, or any sweetener of choice, to taste
  • 1 large egg optional
  • 1 scoop collagen optional

Instructions
 

  • Place all ingredients into a high powered blender and blend until smooth and no chunks remain.  (You may use a regular blender, but I recommend soaking the nuts overnight to soften a bit)
  • Place the liquid into a small saucepan and gently simmer over medium low heat until thick (if you want it thicker, cook it longer).
  • Top with preferred toppings, and serve!

Notes

    Thanks for this. I was craving oatmeal this morning, went in search of a low carb alternative, and found your recipe. I used fairlife (high protein) whole milk and 2 tblsp flaxseed meal (accidentally), no egg, and it thickened up nicely. I topped it with raspberries and a tablespoon of cream. Very tasty, though I’d like a little more texture – may just chop the pecans next time instead of blending.

      yes, way keep nuts more chunky for texture or add some more on top as well!

    Hi there, I was so excited to see this. I am a diabetic and I just can’t eat anymore eggs. I followed the recipe with the exception of the eggs and collagen and it never really thickened. have you tried making it without the eggs or collagen? or do you have any suggestions to make it thicker?

    This is the absolute best keto hot cereal! It reminds me of my childhood favorite Ralston!! Same taste and consistency! I omitted the egg and collagen but added 1/4 tsp xanthun gum to help thicken it!!! Definitely will be making this more often as a rotation breakfast!! Thank you for this!!

    I’m going to try this right now… but I’m curious… can I make a big batch ahead of time and then reheat during the week? Thanks.

      I am not sure actually! I would probably either blend and leave uncooked in a mason jar in fridge OR bring all the nuts and seeds and store separately to Liz with liquids later. But it could work just fine! Let me know!

    A little like the texture of cream of wheat, but with a little more “mouth feel”. I used macadamia nut milk, and chose the flax over chia. Added a splash of vanilla, and used cinnamon and brown sugar substitute. I did choose to use the egg, but not the collagen (I don’t have it). Takes a good 5 minutes to thicken this at about medium heat. Taste was good and satisfied my desire for a warm cereal for breakfast. I will do this again. I may leave the pecans a little less ground up, just for the texture. Overall, two thumbs up for taste and low carb option. I am pre-diabetic, and it is hard to find a good breakfast food that isn’t fried, boiled or scrambled eggs, which I like, but not all the time. This is a good option.

    You have no idea how excited it makes me to see this! I have been making an almondmeal/flax seed/ chia hot cereal as an oatmeal replacement for like two years! I always thought I was the only one! I eat it almost EVERY MORNING! It is the perfect replacement for oatmeal. I hope you get a lot of response that people try this, bc it is legit awesome and save dme from eggs everyday when I am low carbing 🙂

    This recipe is so unique – I never would have though to put all these ingredients together, but you’ve made it work! This is such a great sub for other breakfast cereals and I love all that calcium and protein!
