Paleo Blueberry Muffins

A clean eating paleo blueberry muffin bursting with fresh berry flavor and a tender, vanilla scented crumb.  These naturally gluten free blueberry muffins will be loved by your whole family, and the recipe has a dairy free option!

Paleo Blueberry Muffins

I created this simple, low sugar paleo blueberry muffin recipe that my kids go nuts for! It’s great to have a nutrient dense snack available for those ever hungry mouths…some days I can’t keep up! And since doing all of our healing work, nuts, eggs, and dairy have all been added back into the rotation, which will be seen in this recipe.  But if dairy is still an issue for you, no worries, I have options for that too! I have an oat flour gluten free vegan blueberry muffin that eliminates the eggs if you need that.

I like that this recipe uses almond flour as it helps me feel full longer.  For a dairy free version, any faovrite plain or vanilla vegan kefir or yogurt works great.  Forager’s cashewgurt if my personal fav.

The palm sugar lends a darker color and a slightly richer flavor to the muffins, so using regular can sugar is totally fine too for the most tradtional flavor profile and color.

I got to use our beloved blueberry harvest from a North Idaho farm we visit every August when we are at our family cabin. 

There is something special about being able to harvest your own  food that is SO satisfying!  And while we love the berries most for fresh eating….we pick gallons to use throughout the year back home!  Here in Oregon, we can find great no spray berries too!!  Bring on the summer!

 

Wholesome Gluten Free Muffins

I love having a nutrient dense muffin perfect for a lunchbox or a quick grab-and-go breakfast.  And blueberry muffins are a classic! 

I love making my own muffins as conventional varieties are really just cupcakes by a different name.  A healthy breakfast should have some protien and healthy fats for growing or active bodies, and these muffins fit the bill.

The muffins are simple, moist, and easily made with any berry or add in of your choice, you get to choose your own adventure, or whatever you can find in season!!

 We love the addition of the almond extract in these, but it is totally optional, you decide!

Ingredients
  

Liquids:

  • 1/2 cup kefir or buttermilk, OR any plain or vanilla yogurt (dairy free options work great!0
  • 3/4 cup palm sugar or other granulated sugar
  • 1/4 cup butter softened coconut oil, or palm shortening
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract optional
  • 1 teaspoon apple cider vinegar or lemon juice

Dry:

  • 1 1/2 cups almond flour
  • 1/2 cup cassava flour you could also use more almond flour, tapioca, or 1/4 cup coconut flour, but it will change the end product
  • 1/2 cup tapioca flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 1/2 cup blueberries fresh. If using frozen, addtional baking time needed, apx 5 minutes

Instructions
 

  • Preheat oven to 350 degrees and grease a 12 muffin tin.
  • In the jar of a blender, blend all liquid ingredients until smooth.
  • In a large mixing bowl, whisk the dry ingredients (minus the blueberries)
  • In a separate bowl, toss the blueberries with a couple of tablespoons of the flour mixture until they are evenly coated (this helps them float in the batter as opposed to sinking).
  • Fold the liquid ingredients into the dry until mixed. ***Take stock of the batter. With different brands of almond flour and cassava flour out there, there CAN be variability in liquids absorbed. If it seems overly thin after a couple of minutes (flour needs brief time to 'drink' some of the liquid), then add a bit of any of the above flours until a typical muffin/cake batter is achieved.
  • Gently fold in the blueberries.
  • Distribute batter to muffin cups, filling 2/3 of the way.
  • Bake for 20-25 minutes until the tops are set. ***if you are using frozen blueberries, this will effect the final cooking time, more like 25 minutes instead of 20!
